Tiramisu Parfaits
"Now you can enjoy tiramisu without the fuss. These parfaits have all the luscious creamy coffee and chocolate flavor of tiramisu in a fraction of the time. If you don’t have parfait glasses, martini glasses are a good choice, but any small dessert dishes will suffice.
Note: This dessert tastes best (and firms up a bit) if allowed to chill in the refrigerator for an hour or two, but is also perfectly yummy if eaten right away.
- 1/3 cup sugar
- 1 (8-ounce) container tofu cream cheese
- 1/3 cup cashew butter
- 1 teaspoon vanilla extract
- 8 to 12 vegan shortbread cookies
- 1/4 cup Kahlua or other coffee liqueur
- Cocoa powder, for dusting
1. Combine the coffee and sugar in a small bowl, stirring to dissolve the sugar. Set aside to cool.
2. In a blender or food processor, combine the cream cheese, cashew butter, vanilla, and the reserved coffee mixture. Blend until smooth and creamy.
3. Break a cookie into the bottom of each of 4 parfait glasses or other dessert glasses. Drizzle each with 1 teaspoon of Kahlua and top with a spoonful of the cream cheese mixture. Repeat with the layering of the cookies, Kahlua, and cream cheese mixture, until the glasses are full, ending with a layer of the cream cheese mixture, dusted with cocoa powder.
4. Serve at once or refrigerate and serve chilled.

Day 18: Engine 2 Diet
Returned from 4 days of camping. I thought it was going to be difficult to be vegan with the rest of the campers eating non-vegan options. However, with a little planning it worked out well. I was even able to find a nice garden burger for dinner when we went into town for dinner. Rip's Big Bowl cereal really helped me start each morning with energy. For the first time I tried vanilla flavored almond millk which was very tasty.

Scored on the Ninja blender at Costco. While not as good as Blendtec or Vitamix blenders you can't beat the price at $99 versus $350-$400 for the others. So you get a lot of blender for $99.

Day 11: Engine 2 Diet
Wow!
These pancakes tasted great!
For a treat this Sunday morning I decided to make pancakes. I used Bob's Red Mill Organic High Fiber Pancake & Waffle Whole Grain Mix.
The recipe called for:
1 Cup Mix
1 Egg (Didn't use)
1 Tbsp. Oil ( I substituted 2 Tbsp applesauce for the egg and oil)
3/4 Cup Cold Milk (Used Soy Milk)
I added cinnamon and sprinkled 4 blueberries on top of each pancake.

Day 10: Engine 2 Diet
I have made it 10 days. I can tell my body has definitely changed inside. It feels healthier. I have my energy back and have made it past no caffeine or alcohol. I know more now about working with whole foods and this will inform my second grocery shopping outing. I look forward to visiting the Saturday market this morning to buy fresh produce!

Day 5: Engine 2 Diet
I did a good job packing my breakfast and lunch in order to stay compliant with the diet. I did not anticipate that I would get hungry early for dinner. The last hour of work was very difficult. I need to have snacks in between meals and learn how to be a grazer.
Thought
You know you are eating a good vegan diet when if you can't finish your meal the scraps can go into the compost bin.

Movie to watch
Veducated is a feature-length documentary that follows three

Inspiration
So, I was worrying I had overdone my shopping of vegetables and fruits and may not be able to consume all of them in time. Then, I had a flash inspiration! I have a juicer I haven't used forever. I can juice them when necessary and drink all of those precious phytonutrients before they go to the compost bin. Phew! I also started looking around for strong blender and this one has consistently high marks:

I have noticed that I have a lot of produce not eaten and I need to get busy munching or some of the vegetables will go bad. Also paying more attention to oils in my diet. Not ready to give up coffee and alcohol just yet but seriously contemplating. I am beginning to appreciate the beauty of simplicity and that over stimulation is masking the innate flavors and experience of whole foods.

So, on day 2, I decided to treat myself to Rip's Big Bowl hearty cereal. Wow! Delicious! I can see why this was a favorite recipe of diet participants.

While doing this I decide to reward myself with a vegetarian pizza and vegetarian pepperoni to see what it was like. Enclosed is photo. Remarkably it was very good and I would eat it again. Added hot red pepper and fresh basil. Texture (9), Smell(9), Taste (9), Site(8). Score 35/40.

Day 3: Engine 2 Diet
Today is day 3 on the Engine2 diet. So far so good. I am learning how to follow my diet while the rest of my family eats their normal diet. This means a lot more cooking for myself. I hope to find recipes they will want to try but I think it is going to take awhile. As I think about the diet, I started to realize the similarity with garden composting. If it can readily compost it is probable better to eat. So the last thing one would put in a compost bin is meat and oils. I wonder if these principles work the same way for the human intestinal tract? We are able to have better gut flora without all the meat, dairy and oils. My body does seem to feel less stressed processing the foods I have been eating the last 3 days but it is very early in the diet to know.
