Recipe: Vegan Avocado/Basil Fresco Spaghetti

This is a great summer recipe I just made up. Very tasty.

Vegan Avocado/Basil Fresco Spaghetti

Ingredients:

6 ounces Thin Whole Wheat Spaghetti

Sauce:
1 Ripe Avocado
1 Cup Fresh Basil Chopped
1/4 Teaspoon White Pepper
1/4 Teaspoon Onion Powder
1 Clove Crushed Garlic
1/4 Box Silken Tofu
1/4 Cup Almond Milk

Garnish:
1 Tomato Chopped
1/8 Cup Pine Nuts
A few Basil leaves thinly sliced

Boil Spaghetti.  While Spaghetti is cooking, combine in blender: Heat the silken tofu in the microwave until steaming. Reserve the tomato, pint nuts and few basil leaves for the garnish.  Blend all remaining ingredients with the steaming tofu until smooth. Taste and season as necessary.  Drain Spaghetti and mix in bowl with sauce.   Take thongs and plate and sprinkle the tomato, pine nuts and basil leaves on top.

I watched this movie to celebrate 28 days being a Vegan.  Very good movie!  Highly Recommended.

Best Black Bean Soup


BEST BLACK BEAN SOUP

INGREDIENTS

  • 2 cups dry black beans, or 3- 15 ounce cans black beans, rinsed and drained
  • 4 cups water or vegetable broth
  • 1 large onion, chopped (1 cup)
  • 10 medium garlic cloves, chopped
  • 2 teaspoons ground cumin
  • 2 medium carrots, diced
  • 1 cup chopped bok choy
  • 1 large bell pepper, chopped (1 cup)
  • 1 1/2 cups orange juice
  • 2 medium tomatoes diced (2 cups)
  • 1 large sweet potato, steamed and cubed (1 cup)
  • black pepper , to taste
  • cayenne, to taste
  • green onions (scallions) chopped
  • cilantro, lots!
  • salsa
DIRECTIONS

  1. Soak dry beans overnight or for at least 4 hours in plenty of water. Place soaked beans in a heavy soup pot with 4 cups of water or broth. Bring to a boil, cover, and simmer about 1 1/4 hours, or until beans are tender (if using canned beans, skip this step)
  2. In a wok, stir-fry onion, half the garlic, the cumin, and carrots until just tender in a few tablespoons of water. Add bok choy, the remaining garlic, and bell pepper, stir-fry another 10-15 minutes until everything is very tender.
  3. Add vegetable mixture to beans, scraping bowl carefully. stir in orange juice, diced tomatoes and sweet potato. Add black pepper and cayenne pepper.
  4. Puree some or all soup in batches in a food processor or blender.
  5. Simmer over low heat for 10 to 15 minutes. serve topped with chopped green onions, cilantro and salsa. the salsa really adds a punch!

Tiramisu Parfaits


"Now you can enjoy tiramisu without the fuss. These parfaits have all the luscious creamy coffee and chocolate flavor of tiramisu in a fraction of the time. If you don’t have parfait glasses, martini glasses are a good choice, but any small dessert dishes will suffice.
Note: This dessert tastes best (and firms up a bit) if allowed to chill in the refrigerator for an hour or two, but is also perfectly yummy if eaten right away.
  • 1/2 cup hot black coffee
  • 1/3 cup sugar
  • 1 (8-ounce) container tofu cream cheese
  • 1/3 cup cashew butter
  • 1 teaspoon vanilla extract
  • 8 to 12 vegan shortbread cookies
  • 1/4 cup Kahlua or other coffee liqueur
  • Cocoa powder, for dusting
1. Combine the coffee and sugar in a small bowl, stirring to dissolve the sugar. Set aside to cool.
2. In a blender or food processor, combine the cream cheese, cashew butter, vanilla, and the reserved coffee mixture. Blend until smooth and creamy.
3. Break a cookie into the bottom of each of 4 parfait glasses or other dessert glasses. Drizzle each with 1 teaspoon of Kahlua and top with a spoonful of the cream cheese mixture. Repeat with the layering of the cookies, Kahlua, and cream cheese mixture, until the glasses are full, ending with a layer of the cream cheese mixture, dusted with cocoa powder.
4. Serve at once or refrigerate and serve chilled.
